Whey is a product resulting from the cheesemaking process. Grande Bravo functional whey protein is produced from the finest white Italian cheeses made in our own facilities. Unlike some whey products, Grande Bravo doesn’t require bleaching or other chemical modifications. It undergoes a natural proprietary drying process to physically modify its structure, resulting in a concentrated product (much like other concentrated natural foods such as granulated sugar) that maintains many of the same nutrients and favorable attributes of the original product.

Fresh dairy can experience viscosity breakdown when exposed to fluctuating thermal treatments, freeze/thaw cycles, high shear or final cooking methods. Undesirable food texture examples include syneresis, ice crystals, gummy or slimy textures, filling blowout, lumps, graininess and more.

Grande Bravo is highly durable and withstands the abuse of most processing environments, and its superior water-holding capabilities allow it to be easily hydrated.
