However, creating crisps requires additional steps. The whey protein concentrate is combined with a starch to enable expansion or “puff” during extrusion, using technology common in the production of puffed snacks and cereals. The extrusion equipment includes a long metal barrel that houses one or two screws, creating shear. The whey-starch blend is forced through a heated chamber, applying thermal and mechanical energy. 

As the blend exits through a narrow die, the pressure differential triggers rapid expansion of the starch, forming the crisp, airy structure characteristic of whey protein crisps. No chemicals are used in the process.
